Tauren Sunwalkers aren’t Paladins, they just use the mechanics to represent their unique class. The same could easily be done for mages. The difference is that the Legion only wanted the Scourge to cause chaos to make their next invasion more successful, while the Lich King wanted to make the Scourge large and powerful enough to fight against the Legion when they return. The LK is not quite as powerful as some of the most ancient beings in the Warcraft universe. His power is basically what was given to Ner'zhul by Kil'Jaeden to spread the plague around and weaken Azeroth's defenses prior to the Third War.
